Summer Mojitos
makes 4 mojitos
- 8 tablespoons of freshly squeezed lime juice
- 4 ounces sugar (a little less than 2/3 cup) or 1/2 cup maple syrup
- 1 cup white rum
- Handful of mint sprigs
- Club soda
- 4 lime wedges
In a blender, pulse and dissolve the sugar (or maple syrup) and lime juice. Add the rum and half of the mint sprigs. Blend for a few seconds. Pour the mixture into 4 tumblers filled 3/4 with ice. Top each drink with a splash of club soda, a sprig of mint, and a lime wedge.
